Ingredients
- 2 chicken legs
- 4 longanisa (Filipino Sausage)
- 1/4 cup chopped green onion
- 1/4 cup chopped basil
- 10 stick thyme
- 1/4 cup cilantro
- 1/2 tbsp fennel
- 1/2 tsp oregano
- 1/2 tsp garlic salt
- 1 ground black pepper
- 1/4 tsp cayenne pepper
- 1 salt
- 1 sea salt
Instructions
- Preheat oven to 350F
- De-bone chicken legs if needed.
- Season inside meat with salt and pepper.
- Put aside.
- In a bowl, mix together longanisa (skin removed), green onion, basil, cilantro, thyme, oregano, fennel, ground black pepper, garlic salt, and cayenne.
- Divide mixture in half.
- Wrap sausage mixture inside the chicken leg.
- Score outside of chicken leg then tie with twine.
- Season with sea salt to crisp the skin.
- Bake in oven for about 45 minutes then broil on high for about 2 minutes.
