Chicken-Wrapped Sausage

Ingredients

  • 2 chicken legs
  • 4 longanisa (Filipino Sausage)
  • 1/4 cup chopped green onion
  • 1/4 cup chopped basil
  • 10 stick thyme
  • 1/4 cup cilantro
  • 1/2 tbsp fennel
  • 1/2 tsp oregano
  • 1/2 tsp garlic salt
  • 1 ground black pepper
  • 1/4 tsp cayenne pepper
  • 1 salt
  • 1 sea salt

Instructions

  1. Preheat oven to 350F
  2. De-bone chicken legs if needed.
  3. Season inside meat with salt and pepper.
  4. Put aside.
  5. In a bowl, mix together longanisa (skin removed), green onion, basil, cilantro, thyme, oregano, fennel, ground black pepper, garlic salt, and cayenne.
  6. Divide mixture in half.
  7. Wrap sausage mixture inside the chicken leg.
  8. Score outside of chicken leg then tie with twine.
  9. Season with sea salt to crisp the skin.
  10. Bake in oven for about 45 minutes then broil on high for about 2 minutes.
