Ingredients

  • 12 each chicken wings
  • large
  • wing tips removed
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 each garlic clove
  • crushed
  • 1/2 teaspoon tarragon leaves dried
  • 1 each bay leaves
  • 1 x salt and pepper
  • to taste
  • 2 tablespoons butter

Instructions

  1. In a large bowl combine oil, lemon juice, garlic, tarragon, bay leaf, salt and pepper.
  2. Coat wings with mixture, cover, and refrigerate overnight.
  3. Place chicken wings in baking dish and dot with butter.
  4. Bake in preheated 400F (200C) oven for 15 minutes.
  5. Turn chicken wings and cook 15 to 20 minutes more until chicken is golden.
  6. Plain or curried rice would be a good side dish.
  7. Makes 4 servings.
