Ingredients

  • 1 pkg. (10 ounce.) frzn minced broccoli
  • 3 med. stalks celery
  • thinly sliced (about 2 c.)
  • 1 med. onion
  • minced (about 1/2 c.)
  • 2 c. water
  • 1 teaspoon salt
  • 1 can (10 3/4 ounce.) condensed chicken broth or possibly 1 1/4 c. chicken broth (left)
  • 1 c. cool lowfat milk
  • 1/2 c. all purpose flour
  • 1 1/2 c. cut up cooked chicken (left)
  • 1 c. lowfat milk
  • 6 ounce. Swiss cheese
  • cut into cubes
  • about 1 1/2 c.

Instructions

  1. Rinse broccoli under running cool water to separate; drain.
  2. Heat broccoli, celery, onion, water, salt and broth to boiling in Dutch oven; reduce heat.
  3. Cover and simmer 10 min.
  4. Shake 1 c. cool lowfat milk and the flour in tightly covered container; gradually stir into warm mix.
  5. Heat to boiling.
  6. Boil and stir 1 minute.
  7. Stir in chicken and 1 c. lowfat milk.
  8. Heat over low heat, stirring occasionally, just till warm, about 10 min.
  9. Stir in cheese; let stand just till cheese is melted, 3 to 5 min; stir.
  10. 8 servings.
