Ingredients
- 1 pkg. (10 ounce.) frzn minced broccoli
- 3 med. stalks celery
- thinly sliced (about 2 c.)
- 1 med. onion
- minced (about 1/2 c.)
- 2 c. water
- 1 teaspoon salt
- 1 can (10 3/4 ounce.) condensed chicken broth or possibly 1 1/4 c. chicken broth (left)
- 1 c. cool lowfat milk
- 1/2 c. all purpose flour
- 1 1/2 c. cut up cooked chicken (left)
- 1 c. lowfat milk
- 6 ounce. Swiss cheese
- cut into cubes
- about 1 1/2 c.
Instructions
- Rinse broccoli under running cool water to separate; drain.
- Heat broccoli, celery, onion, water, salt and broth to boiling in Dutch oven; reduce heat.
- Cover and simmer 10 min.
- Shake 1 c. cool lowfat milk and the flour in tightly covered container; gradually stir into warm mix.
- Heat to boiling.
- Boil and stir 1 minute.
- Stir in chicken and 1 c. lowfat milk.
- Heat over low heat, stirring occasionally, just till warm, about 10 min.
- Stir in cheese; let stand just till cheese is melted, 3 to 5 min; stir.
- 8 servings.
