Chicken Teriyaki Microwave (Low Calorie) Recipe

Ingredients

  • 1/3 c. Chablis dry white wine
  • 1/4 c. low-sodium soy sauce
  • 3 tbsp. unsweetened pineapple juice
  • 2 tbsp. honey
  • 4 chicken breasts
  • boned and skinned
  • 1 (8 ounce.) can water chestnuts
  • sliced
  • 1 tbsp. water
  • 2 1/2 teaspoon corn starch

Instructions

  1. Combine wine, soy sauce, pineapple and honey.
  2. Rinse chicken.
  3. Place in 11 x 7 x 2-inch glass dish.
  4. Pour sauce over chicken.
  5. Cover.
  6. Marinate in refrigerator for 2 hrs.
  7. Top with chestnuts.
  8. Microwave on HIGH for 8 to 10 min.
  9. Rearrange chicken after 5 min.
  10. Remove chicken; keep hot.
  11. Combine water and corn starch.
  12. Add in to marinade.
  13. Microwave 2 to 4 min till thickened.
  14. Serve with 1/2 c. cooked rice per serving.
  15. Serves 4.
