Ingredients
- 1 chicken
- cut up
- 1 pound sausage (polish or possibly smoked
- cut up)
- 1 lg. can whole tomatoes
- 1 green pepper
- sliced
- Fresh mushrooms
- sliced
- 1/3 c. flour
- Red pepper flakes
- Extra virgin olive oil
- 1 c. white wine or possibly chicken broth
- Bay leaf
- 2 lg. cloves garlic
- diced
- Basil
- Dry parsley
- Salt & pepper to taste
Instructions
- Salt, pepper and coat chicken with flour.
- Brown in extra virgin olive oil.
- Remove to platter.
- Brown sausage and remove.
- Saute/fry green pepper, onions and mushrooms.
- Add in tomatoes.
- Stir.
- Add in white wine or possibly chicken broth and spices.
- Stir till slightly thickened.
- Add in more flour if needed.
- Return chicken and sausage and cover.
- Cook till tender.
- Serve with rice or possibly pasta or possibly cheese garlic grits.
