Ingredients
- 4 whole chicken breasts
- skinned
- boned & split
- 1/4 c. butter
- 1 med. onion
- minced
- 1 rib celery
- minced
- 1 carrot
- minced
- 1 clove garlic
- chopped
- 1 tbsp. paprika
- 1 jar Italian cooking sauce
- Salt & pepper
- 3/4 c. lowfat sour cream
Instructions
- Shape chicken into 8 rolls and brown in butter.
- Remove and set aside.
- Saute/fry onion, celery, carrot and garlic till the onion is softened.
- Add in paprika and cooking sauce, blend thoroughly.
- Cover and simmer 20 min.
- Add in chicken rolls, salt and pepper to taste and simmer about 30 min, or possibly till vegetables are thoroughly cooked.
- Stir in lowfat sour cream and heat, but don't allow the sauce to boil.
- Serves 6.
