Ingredients
- 2 or possibly more c. cooked chicken or possibly turkey
- 1 c. chicken stock
- 1 can mushroom soup
- 1/4 c. chopped onion
- 1/4 c. minced celery
- 1/4 c. minced green pepper
- 1 sm. can mushrooms & juice
- 1/2 c. salted cashew nuts
- 2 (3 ounce.) cans chow mein noodles
Instructions
- Saute/fry onion, celery, green pepper in a little butter.
- Combine chicken, stock, soup, mushrooms and sauteed vegetables.
- Before putting in the oven, add in 1/2 of the chow mein noodles and all of the nuts.
- Spread rest of the noodles on top.
- Bake at 350 degrees for 1/2 to 3/4 hour.
- (Excellent way to use leftover turkey from the holidays.)
