Ingredients
- 4 chicken breasts
- boneless skinless
- 5 tablespoons olive oil
- 1 onion
- finely chopped
- 6 garlic cloves
- finely chopped
- 4 tablespoons parsley
- chopped finely
- 2 lemons
- salt and pepper
Instructions
- Slice the chicken breasts widthwise into very thin slices.
- Heat the olive oil in large skillet.
- Add the onion and cook until softened but not browned.
- Add the garlic and cook for an additional 30 seconds.
- Add the sliced chicken to the skillet and cook gently for 5 - 10 minutes until all are lightly browned and the chicken is tender.
- Add grated lemon rind and the juice of 1 lemon and let it bubble.
- Remove the skillet from the heat, stir in the parsley and season to taste with salt and pepper.
- Transfer the chicken to a warm platter.
- Sprinkle some more lemon rind and serve with lemon wedges for squeezing over the chicken.
- Serve with crusty bread for mopping up the lemon and garlic juices.
