Ingredients
- 500 grams Haloumi cheese
- 1 Cherry or Roma tomatoes punnet
- 1 onion
- 1 lemon
- 8 mushrooms
- peeled
- 2 large skinless chicken breast
- diced roughly
- 2 capsicum
Instructions
- Soak skewers in water for 20 minutes.
- Squeeze half lemon over chicken pieces.
- Cut tomatoes in half.
- Roughly dice cheese and the rest of the vegetables.
- Thread an onion and capsicum piece onto a skewer followed by a tomato half.
- Thread a piece of chicken then cheese onto skewer.
- Continue threading chicken, cheese and vegetables onto skewers.
- Squeeze remaining lemon onto finished skewers and chill until ready to eat.
- Grill, barbecue or fry skewers, turning regularly, until cooked and browned.
- Serve with rice and green salad.
- Drizzle with tzatziki for a extra taste.
