Chicken, Haloumi and Vegetable skewers

Ingredients

  • 500 grams Haloumi cheese
  • 1 Cherry or Roma tomatoes punnet
  • 1 onion
  • 1 lemon
  • 8 mushrooms
  • peeled
  • 2 large skinless chicken breast
  • diced roughly
  • 2 capsicum

Instructions

  1. Soak skewers in water for 20 minutes.
  2. Squeeze half lemon over chicken pieces.
  3. Cut tomatoes in half.
  4. Roughly dice cheese and the rest of the vegetables.
  5. Thread an onion and capsicum piece onto a skewer followed by a tomato half.
  6. Thread a piece of chicken then cheese onto skewer.
  7. Continue threading chicken, cheese and vegetables onto skewers.
  8. Squeeze remaining lemon onto finished skewers and chill until ready to eat.
  9. Grill, barbecue or fry skewers, turning regularly, until cooked and browned.
  10. Serve with rice and green salad.
  11. Drizzle with tzatziki for a extra taste.
