Chicken Elizabeth With Cream Curry Sauce Recipe

Ingredients

  • 2 young roasting hens or possibly 6 to 8 breasts
  • 1 c. white wine
  • 1 bay leaf
  • 1 sprig parsley
  • 1 teaspoon thyme
  • 1 carrot
  • halved

Instructions

  1. Place chicken in large pot with wine and seasonings.
  2. Add in water to cover.
  3. Poach till tender.
  4. Cold in liquid.
  5. Remove chicken from bones in large pcs.
  6. Set aside.
  7. SAUCE: Saute/fry onion in oil 3 to 4 min.
  8. Add in curry, simmer 2 min.
  9. Add in wine, wter, tomato paste, bay leaf and bring to a boil.
  10. Add in sugar and lemon juice.
  11. Simmer 5 - 10 min.
  12. Remove from pan and let cold.
  13. Blend the curry mix with mayonnaise and apricot puree and adjust seasonings, if necessary.
  14. Fold in whipped cream.
  15. Toss chicken with sauce.
  16. Serve chilled.
  17. This lovely, delicate dish is well worth the effort.
