Ingredients
- 4 chicken breasts
- 1 med. eggplant
- 2 med. zucchini
- 1 green pepper
- 1 onion
- Garlic (2 cloves
- fresh)
- 1 (16 ounce.) can whole tomatoes
- 1 (16 ounce.) can tomato sauce
- 1 (6 ounce.) can tomato paste
- Basil
- thyme
- oregano
- parsley flakes
Instructions
- Peel eggplant and cut into slices.
- Place in ice cool water while preparing recipe.
- Slice chicken into strips, brown in extra virgin olive oil.
- Set aside.
- Brown onion and green pepper till tender.
- Add in machine and eggplant.
- Add in chicken, tomatoes, tomato sauce and paste (with a little water).
- Add in seasonings (as desired).
- Simmer 2 hrs.
- Serve over spaghetti.
