Ingredients
- 1/2 cup chopped cucumber( I leave peel on but remove seeds)
- 1/2 cup chopped tomato( I remove seeds)
- 1/2 cup diced cooked chicken
- 1/4 of an avocado chopped
- 1/2 cup plain greek yogurt
- 2 tsp lime juice
- 1/2 tsp cumin
- 1 sea salt and pepper to taste
- 1 bed of romaine(optional)
Instructions
- Toss first four ingredients in a bowl.
- Whisk yogurt ,lime juice, cumin, salt and pepper and pour over ingredients in bowl.
- Mix well.
- Serve on bed of romaine or eat alone.
- Alone can also be served in a wrap but I'm going low carb on this.
