Ingredients
- 2 Tablespoons Olive Oil
- 1/2 teaspoons Black Pepper
- 1/2 teaspoons Salt
- 6 whole Chicken Breasts
- 6 ounces
- weight Goat Cheese
- 2 Tablespoons Butter
- 1 Tablespoon Yellow Onion
- Chopped
- 1 Tablespoon Garlic
- Chopped Finely
- 1/2 cups Dry Red Wine
- 1/4 cups Lemon Juice
- 8 Tablespoons Unsalted Butter
- Cold
- 1 cup Sun-dried Tomatoes
- Sliced
- 1/4 cups Basil
- Chopped
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Pepper
Instructions
- Preparation for chicken:
- Rub the olive oil, pepper, and salt on both sides of chicken breasts.
- Place chicken in a large sauce pan on medium heat to cook.
- Depending on the size of the chicken, it could take anywhere from 25-35 minutes.
- Make sure its not pink and is cooked all the way through.
- In the last few minutes of cooking, add an ounce of goat cheese to each piece.
- Preparation for sauce:
- In a medium sauce pan, place the butter and onions on medium heat and cook for about 5 minutes.
- Then add garlic, red wine, and lemon juice.
- Increase the heat just a little bit and simmer the sauce.
- After 4-5 minutes, add butter one tablespoon at a time; stir until melted.
- Now add sun-dried tomatoes, basil, salt and pepper and stir.
- When plating, add the chicken and then top with the sauce and sun dried tomatoes.
