Ingredients
- 3 cups cooked white rice
- 3 cups diced cooked chicken
- 2 cups quartered cherry tomatoes
- 1 cup mayonnaise
- 3/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeno pepper
- seeded and minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 cups prepared guacamole
- preferably fresh from your supermarkets refrigerator case
- for serving
Instructions
- In a large bowl, toss together the rice, chicken, cherry tomatoes, mayonnaise, red onion, cilantro, jalapeno, salt, and pepper.
- Divide the chicken and rice salad equally among four to six plates and top each serving with a generous dollop of the guacamole.
