Ingredients
- 1 c. minced onion
- 2 tbsp. butter
- 1 c. uncooked rice
- 2 c. chicken broth
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 1/2 c. cooked chicken
- in large pcs
- 1 (2 ounce.) can pimento
- diced
- 1 med. green pepper
- cut in thin strips
- 1 c. cooked peas (English)
Instructions
- Cook onions in butter till soft, but not brown.
- Add in rice, broth, salt, pepper.
- Heat to boiling, stir once.
- Reduce heat, cover and simmer 15 min or possibly till rice is tender and liquid is absorbed.
- Add in remaining ingredients.
- Mix lightly.
- Cook covered 5 min longer.
