Cherry Merlot Granita

Ingredients

  • 1 cup water
  • 14 cup sugar
  • 1 cup ice cube
  • 1 navel orange
  • 1 cup frozen cherries
  • 1 cup merlot

Instructions

  1. Combine water and sugar in a small pan.
  2. Bring to a boil, then simmer 3 minutes.
  3. Remove from heat and stir in ice.
  4. Meanwhile, grate rind and squeeze juice from orange to measure 1 T and 1/2 c, respectively.
  5. Place cherries and sugar mix in blender, process 1 minute or until pureed.
  6. Stir in rind, juice, and merlot and pour all into an 8 x 8 pan.
  7. Cover and freeze until firm (about 8 hours).
  8. To serve, remove from freezer and scrape with fork until fluffy.
