Ingredients

  • 8 ounces
  • weight Hot Pork Sausage
  • 1/2 cups Red Bell Pepper
  • Finely Minced
  • 1 whole Jalapeno
  • Most Seeds Removed
  • Finely Minced
  • 1/2 pounds Butter
  • Softened
  • 2 cups All-purpose Flour
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Black Or Cayenne Pepper
  • 4 cups Shredded Cheddar Cheese
  • Room Temperature

Instructions

  1. In a medium-sized frying pan, cook sausage over medium heat until browned.
  2. Drain grease.
  3. Add minced peppers.
  4. Cook until peppers are soft but not squishy, around 5 minutes.
  5. Remove from heat and allow the mixture to cool.
  6. Preheat oven to 400 F. In a large mixing bowl, combine butter, flour, salt, and pepper.
  7. Beat with a mixer on medium low speed until combined.
  8. Add the shredded cheese and stir well.
  9. Add cooled sausage mixture and stir until well blended.
  10. Form dough into 1 inch balls and place them on a parchment paper lined baking sheet 2 inches apart.
  11. Bake in a 400 F oven for 15-20 minutes or until light golden brown.
  12. I usually do this in two batches which makes the total cooking time 30-40 minutes.
  13. Serve warm or cold.
  14. You can store these in the refrigerator or freezer.
  15. Makes about 5 dozen.
