Ingredients
- 8 ounces
- weight Hot Pork Sausage
- 1/2 cups Red Bell Pepper
- Finely Minced
- 1 whole Jalapeno
- Most Seeds Removed
- Finely Minced
- 1/2 pounds Butter
- Softened
- 2 cups All-purpose Flour
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Or Cayenne Pepper
- 4 cups Shredded Cheddar Cheese
- Room Temperature
Instructions
- In a medium-sized frying pan, cook sausage over medium heat until browned.
- Drain grease.
- Add minced peppers.
- Cook until peppers are soft but not squishy, around 5 minutes.
- Remove from heat and allow the mixture to cool.
- Preheat oven to 400 F. In a large mixing bowl, combine butter, flour, salt, and pepper.
- Beat with a mixer on medium low speed until combined.
- Add the shredded cheese and stir well.
- Add cooled sausage mixture and stir until well blended.
- Form dough into 1 inch balls and place them on a parchment paper lined baking sheet 2 inches apart.
- Bake in a 400 F oven for 15-20 minutes or until light golden brown.
- I usually do this in two batches which makes the total cooking time 30-40 minutes.
- Serve warm or cold.
- You can store these in the refrigerator or freezer.
- Makes about 5 dozen.
