Ingredients
- 1/2 cups Chopped Onion
- 1/2 cups Chopped Green Pepper
- 3 Tablespoons Butter Or Margarine
- 1 can Cream Of Chicken Soup
- 1 can 8 Oz. Sliced Mushrooms
- Drained
- 1 jar 2 Oz. Chopped Pimentos
- Drained
- 1/2 teaspoons Dried Basil
- 1 package 8 Oz. Noodles
- Cooked And Drained
- 3 cups Diced Or Shredded Chicken
- 2 cups Ricotta Cheese
- 2 cups Shredded Cheddar Cheese
- 1/2 cups Parmesan Cheese
- 1/2 cups Buttered Bread Crumbs
Instructions
- In a skillet, saute onion and green pepper in butter till soft.
- Remove from the heat and stir in the soup, mushrooms, pimentos and basil.
- Set aside.
- In a large bowl, combine the noodles, chicken and cheese.
- Stir well to make sure you have evenly distributed the ricotta then add the soup mixture and combine well.
- Transfer to a greased 13x9 baking dish.
- Bake uncovered at 350 for 45 min.
- or until bubbly.
- Sprinkle with the buttered bread crumbs and cook for an additional 15 min.
- Serve with a nice salad and some crusty bread and enjoy!
- If you have leftovers they are killer.
