Caviar Cucumber Boats

Ingredients

• 1 (2 ounce) jarred salmon caviar (like Romanoff)
• English cucumber
• cut 1/2-inch thick slices
• 13 cup whipped cream cheese
• 1 teaspoon chopped fresh dill
• black pepper
• fresh dill sprigs or lemon zest

Instructions

1. Scoop out center of each cucumber slice with a small melon baller.
2. In a small bowl combine cream cheese, chopped dill and black pepper.
3. Using a small spoon or a pastry bag, fill the center of each hollowed cucumber slice.
4. Top each with a spoonful of caviar.
5. Garnish with dill sprigs.
