Ingredients
- 1 lb. okra
- sliced (5 cups)
- 4 cups fresh corn (from 4 ears)
- 1 1/2 Tbs. coconut oil
- 1 tsp. brown sugar
- 1/4 tsp. salt
- 1 Tbs. fresh lime juice ( 1/2 lime)
- 13 cup unsweetened coconut flakes
- toasted
- 1 Tbs. fresh chopped mint
Instructions
- Preheat oven to 425F.
- Toss together okra, corn, coconut oil, brown sugar, and salt in large bowl.
- Spread in single layer on baking sheet, and bake 30 minutes, or until okra and corn begin to brown and caramelize, stirring occasionally.
- Toss hot vegetables with lime juice, toasted coconut, and chopped mint in bowl.
- Serve warm.
