Ingredients
- 24 small Brussels sprouts (trimmed
- outer leaves removed and cut in half)
- 1 garlic clove
- minced
- 1 tablespoon olive oil
- plus additional to coat sprouts
- sea salt
- fresh ground black pepper
- 14 cup asiago cheese
- romano cheese or 14 cup parmesan cheese
- grated
- seasoned breadcrumbs (optional)
Instructions
- Toss cleaned and cut sprouts in a light coating of olive oil.
- Heat the 1 tablespoon olive oil in a large skillet over medium heat.
- Do not overheat.
- Place the brussels sprouts in the pan flat side down in a single layer.
- Sprinkle with a couple pinches of salt.
- Cover and cook for roughly 5 minutes; the bottoms of the sprouts should only show a hint of browning.
- Uncover and increase the heat until the flat sides are deeply browned and caramelized.
- Add the minced garlic to the pan then turn the sprouts to the rounded side to brown slightly.
- Season with additional salt and the freshly ground black pepper.
- Sprinkle on top your cheese of choice.
- If desired, dust lightly with breadcrumbs.
