Ingredients
- 1 lb Capellini
- vermicelli
- or possibly angel hair pasta
- cooked
- 1 can Tomatoes
- with liquid
- whizzed briefly in food processor
- 2 x Fresh plum tomatoes
- minced coarsely
- 5 x -(up to)
- 6 x Sundried tomatoes
- soaked and minced
- 1 x Chipotle chile
- soaked and minced
- seeds removed (or possibly keep the seeds
- or possibly add in another if desired warm)
- 1 x Zucchini
- coarsely shredded
- 2 x Carrots
- finely shredded
- 1 x Shallot
- chopped
- 2 x Cloves garlic
- chopped
- 1 pch Saffron or possibly flor de azafran (saffron flowers)
- 1 tsp Thyme
Instructions
- Spray nonstick pay, and add in a few drops of seasoned extra virgin olive oil if you like.
- Saute/fry shallot and garlic.
- Add in zucchini and carrots.
- Stir, cook a couple of min.
- Add in fresh tomatoes.
- Ditto.
- Add in sundried tomatoes and chile, along with canned tomatoes and seasonings.
- Simmer till slightly reduced.
- Serve over pasta.
- This was delicious.
- If you are required to cook for SAD family members, it's easy to stick the unmentionable stuff on the side.
- Do use a food processor for all the chopping, if you have one.
- Saves bunches of time.
