Ingredients
- 1/2 tsp Extra virgin olive oil
- 1 c. Bell peppers
- minced
- 1 c. Onions
- minced
- 2 x Cloves garlic
- chopped
- 30 ounce Dark red kidney beans
- liquid removed and washed
- 29 ounce Crushed tomatoes
- 1 c. Water
- 3 c. Turkey light meat
- skinless
- cooked and cubed
- 1 Tbsp. Chili pwdr
- 1 tsp Coriander
- 1 tsp Red pepper flakes
- 1 tsp Salt
- 1 c. Fat-free Cheddar cheese
- grated
Instructions
- In a skillet heat oil over low heat.
- Add in bell peppers, onions, and garlic.
- Cook till tender.
- Then, add in beans, tomatoes, water, turkey, chili pwdr, coriander, red pepper flakes, and salt.
- Simmer 25 min.
- Serving Ideas : Serve topped with grated cheese, if you like.
