Ingredients

  • 4 slc Calfs liver.", "1 bn Parsley.", "1 x Garlic clove.", "2 Tbsp. Groundnut oil.", "100 gm Butter. Salt, pepper.

Instructions

  1. 1 Peel the garlic.
  2. Wash the parsley and put it through the foodmill with the garlic.
  3. Crush the butter with a fork, adding the parsley and garlic and mixing together well.
  4. 2 Put the butter mix onto a piece of greaseproof paper and shape into a rectangle.
  5. Put into the refrigerator to harden.
  6. 3 Cook the liver slices for 3 min on each side in a very little oil, without searing them.
  7. Season after the first 3 min.
  8. 4 Place the slices of liver on a serving dish.
  9. Cut the parsley and garlic butter into four pcs and place one on each slice of liver.
