Ingredients
- 1 tsp salt
- 1 tsp chopped fresh thyme
- 1/2 tsp dry oregano
- 1/2 tsp cayenne pepper
- 1/2 tsp sweet paprika
- 1/2 tsp freshly-grnd black pepper
- 1/2 tsp fennel seeds crushed
- 4 x halibut fillets - (6 ounce ea)
- 2 Tbsp. extra virgin olive oil
- 4 tsp butter
Instructions
- Preheat oven to 400 degrees.
- Mix first 7 ingredients in small bowl.
- Place fillets on baking sheet.
- Brush on both sides with 1 Tbsp.
- oil.
- Sprinkle top of each with seasoning.
- Heat heavy large skillet (preferably cast-iron) over high heat till very warm.
- Add in remaining 1 Tbsp.
- oil; swirl to coat.
- Place fillets, seasoned-side down, in skillet.
- Cook till very brown on bottom, 1 minute.
- Return fillets, browned-side up, to baking sheet.
- Place in oven; bake till just opaque in center, about 8 min.
- Top each with 1 tsp.
- butter.
- This recipe yields 4 servings.
- Comments: A nod to what could arguably be the dish of the eighties, blackened redfish.
- The technique works equally well with halibut.
