Cajun Style Blackened Halibut Recipe

Ingredients

  • 1 tsp salt
  • 1 tsp chopped fresh thyme
  • 1/2 tsp dry oregano
  • 1/2 tsp cayenne pepper
  • 1/2 tsp sweet paprika
  • 1/2 tsp freshly-grnd black pepper
  • 1/2 tsp fennel seeds crushed
  • 4 x halibut fillets - (6 ounce ea)
  • 2 Tbsp. extra virgin olive oil
  • 4 tsp butter

Instructions

  1. Preheat oven to 400 degrees.
  2. Mix first 7 ingredients in small bowl.
  3. Place fillets on baking sheet.
  4. Brush on both sides with 1 Tbsp.
  5. oil.
  6. Sprinkle top of each with seasoning.
  7. Heat heavy large skillet (preferably cast-iron) over high heat till very warm.
  8. Add in remaining 1 Tbsp.
  9. oil; swirl to coat.
  10. Place fillets, seasoned-side down, in skillet.
  11. Cook till very brown on bottom, 1 minute.
  12. Return fillets, browned-side up, to baking sheet.
  13. Place in oven; bake till just opaque in center, about 8 min.
  14. Top each with 1 tsp.
  15. butter.
  16. This recipe yields 4 servings.
  17. Comments: A nod to what could arguably be the dish of the eighties, blackened redfish.
