Cactus Eggs

Ingredients

• 23 cup nopales
• rinsed
• dried and chopped
• 4 eggs
• whisked
• 2 tablespoons salsa de chile fresco or 2 tablespoons salsa
• of your choice
• 13 cup colby-monterey jack cheese
• grated
• 2 flour tortillas

Instructions

1. In large frying pan scramble Nopales, eggs, and Chile Fresco together.
2. When eggs are set place in tortillas and top with cheese.
