Cactus Eggs
Ingredients
- 23 cup nopales
- rinsed
- dried and chopped
- 4 eggs
- whisked
- 2 tablespoons salsa de chile fresco or 2 tablespoons salsa
- of your choice
- 13 cup colby-monterey jack cheese
- grated
- 2 flour tortillas
Instructions
- In large frying pan scramble Nopales, eggs, and Chile Fresco together.
- When eggs are set place in tortillas and top with cheese.
