Cabbage Soup, Valtellina Style

Ingredients

  • 24 ounces savoy cabbage
  • salt
  • pepper
  • 6 slices stale bread
  • cubed
  • 9 ounces Fontina cheese
  • cubed
  • 4 cups chicken stock
  • 1 12 ounces butter

Instructions

  1. Clean, trim and slice cabbage.
  2. Place cabbage in saucepan and bring to a boil until the cabbage is tender then drain.
  3. In the saucepan place a layer of the cabbage while still warm, then place a layer of bread on top of the cabbage, then a layer of fontina cheese.
  4. Continue doing this until you have used up all of the ingredients.
  5. Gently press down the ingredients with your ladle.
  6. Bring the stock to a boil and pour over the other ingredients.
  7. Let soak for about 2-5 minutes.
  8. Meanwhile, melt the butter in the microwave or a saucepan.
  9. Pour over soup, stir and serve.
