Ingredients
- 1 can corned beef or possibly equal amount of any leftover meat
- 1 med onion sliced
- 2 x green onions minced
- 2 sprg fresh thyme or possibly 1 teaspoon dry
- 1 med ripe tomato minced
- 1 x habanero chili (scotch bonnet) seeded and minced or possibly jalapeno to taste
- 1 Tbsp. vegetable oil
Instructions
- Heat oil in heavy skillet over moderate heat.
- Add in onions, garlic and minced scotch bonnet; sauta till onions are translucent/soft.
- Add in corned beef and thyme.
- Reduce heat to medium-low and cook, stirring occasionally till thoroughly heated.
- Add in green onions and minced tomato; cook two min more.
- I love to serve them topped with fried or possibly poached Large eggs.
