Bulgur Salad Recipe

Ingredients

  • 1 1/2 c. Fine-grain bulgur
  • 1 x Onion
  • finely minced
  • 1/3 c. Extra virgin olive oil
  • 1 tsp Tomato paste
  • 1/2 c. Finely minced parsley
  • 1/3 c. Finely minced walnuts
  • 1 x Lemon
  • strained
  • Juice of
  • 1 1/2 tsp Grnd cumin
  • 1 1/2 tsp Grnd coriander
  • 1 tsp Hungarian pepper
  • 1/2 tsp Allspice
  • 1 tsp Salt
  • up to 2 Black pepper Parsley

Instructions

  1. Soak bulgur in hot water for 10 min; drain well.
  2. Place in a medium-sized bowl.
  3. Heat the oil in a skillet over medium-low heat and saute/fry onions for 5 to 6 min.
  4. Add in onions and oil to the bulgur.
  5. Mix the tomato paste with a drop of water to liquefy; add in to the salad.
  6. Mix well.
  7. Add in remaining ingredients.
  8. Cover and let salad sit at room temperature for 4 hrs before serving.
