Ingredients
- 1 1/2 c. Fine-grain bulgur
- 1 x Onion
- finely minced
- 1/3 c. Extra virgin olive oil
- 1 tsp Tomato paste
- 1/2 c. Finely minced parsley
- 1/3 c. Finely minced walnuts
- 1 x Lemon
- strained
- Juice of
- 1 1/2 tsp Grnd cumin
- 1 1/2 tsp Grnd coriander
- 1 tsp Hungarian pepper
- 1/2 tsp Allspice
- 1 tsp Salt
- up to 2 Black pepper Parsley
Instructions
- Soak bulgur in hot water for 10 min; drain well.
- Place in a medium-sized bowl.
- Heat the oil in a skillet over medium-low heat and saute/fry onions for 5 to 6 min.
- Add in onions and oil to the bulgur.
- Mix the tomato paste with a drop of water to liquefy; add in to the salad.
- Mix well.
- Add in remaining ingredients.
- Cover and let salad sit at room temperature for 4 hrs before serving.
