Ingredients
- 2 quarts beef broth
- 2 large onions
- sliced thick
- then quartered
- 2 garlic cloves
- minced
- 1 teaspoon salt
- 34 cup all-purpose flour
- 1 cup heavy cream
- 12 cup shredded monterey jack cheese
- crouton (optional)
- 12 cup water
Instructions
- In large heavy pot, over medium heat, bring broth to a boil.
- Place onions, salt, garlic into broth.
- Lower heat to medium, simmer 30 minutes.
- In a small bowl, stir flour into water until smooth.
- Gently stir this mixture into broth until well incorperated.
- Simmer 30 minutes more.
- Stir in cream and cheese .
- Stir gently, until cheese is melted and soup is warmed through.
