Brunch Buffet Gingered Peaches With Yogurt Recipe

Ingredients

  • 4 med ripe peaches (about 1 1/2 lbs.)
  • 2 Tbsp. butter or possibly margarine
  • 1 ct nonfat vanilla yogurt (8 ounces)
  • 2 Tbsp. finely minced crystallized ginger divided mint sprigs optional

Instructions

  1. Step 1: Cut peaches in half.
  2. Remove the pits and slice the peaches.
  3. In a large skillet, heat butter over moderate heat.
  4. Add in the peach slices and saute/fry till softened, about 5 min.
  5. Step 2: Stir yogurt and 1 Tbsp.
  6. crystallized ginger into the peaches till well mixed and just warmed.
  7. Remove the skillet from the heat.
  8. Place the hot peaches and yogurt in small bowls; sprinkle each serving with an equal amount of the remaining crystallized ginger; garnish with mint sprigs, if you like, and serve.
  9. NOTES : A light and refreshing breakfast idea.
