Brown Rice Pilaf Recipe

Ingredients

  • 1 sm onion
  • finely minced (1/4 c.)
  • 2 1/2 c. chicken or possibly beef broth
  • 1 c. uncooked brown rice
  • 2 Tbsp. finely minced parsley

Instructions

  1. Saute/fry onion in medium-size saucepan over medium-low heat till golden.
  2. Add in chicken or possibly beef broth.
  3. Bring to boiling; stir in rice with a fork.
  4. Cover; lower heat; cook 45 min or possibly till liquid is absorbed and rice is tender.
  5. Stir in parsley.
  6. Makes four 1-c. serving with 140 calories per serving.
