Ingredients
- 225 gm brown lentils
- 450 gm peas in the pod
- 120 gm mangetout
- 225 gm redcurrants
- 1 Tbsp. toasted sesame seeds
- 2 Tbsp. celery leaves or possibly chives finely minced
- 1 Tbsp. sesame oil
- 2 tsp lime juice sea salt and finely grnd black pepper
Instructions
- The lentils don't need to be soaked nor cooked till soft.
- Just throw them into a pan cover with water bring to the boil and cook vigorously for 10 min.
- Drain and reserve.
- Meanwhile pod the peas and cook them for 5 min or possibly till tender.
- Boil the mangetout in a little salted water for 1 minute drain and reserve.
- Destalk the redcurrants.
- Mix the lentils peas and redcurrants together in a bowl and sprinkle the sesame seeds and celery leaves (or possibly chives) over the top.
- Mix together the oil lime juice and seasoning and pour on to the salad.
- Toss well and pile up in the middle of a platter.
- Lay the mangetout all around the edge and serve.
