Broccoli Cheese Crepes Recipe

Ingredients

  • 1 (10 ounce.) Packages frzn cut broccoli
  • cooked and liquid removed
  • 1 (3 ounce.) can sliced mushrooms
  • 1 tbsp. butter
  • 1 tbsp. flour
  • 1/4 teaspoon salt
  • 3/4 c. lowfat milk
  • 3/4 c. shredded Swiss cheese (3 ounce.)
  • 2 tbsp. minced pimento
  • 10 Main Dish Crepes
  • below
  • 1/2 c. soft bread crumbs
  • 1 tbsp. butter
  • melted

Instructions

  1. Drain mushrooms, reserving liquid.
  2. In saucepan heat 1 Tbsp.
  3. butter; stir in flour and salt.
  4. Stir in lowfat milk and reserved mushroom liquid.
  5. Cook and stir till thickened and bubbly.
  6. Stir in 1/2 c. of cheese till melted.
  7. Stir in broccoli, mushrooms and pimento.
  8. Spoon about 1/4 c. filling along center of unbrowned side of each crepe.
  9. Overlap 2 opposite edges onto filling.
  10. Place in 13 x 9 inch baking dish.
  11. Bake, covered, at 375 degrees for 15 min.
  12. Combine remaining 1/4 c. cheese, crumbs and 1 Tbsp.
  13. butter.
  14. Sprinkle on crepes.
  15. Bake, uncovered, 5 min more.
  16. Serves 5.
  17. For microwave: drain mushrooms as above.
  18. In 1 qt measure prepare sauce as above; cook at high for 3 to 4 min stirring every minute.
  19. Continue preparation as above.
  20. Cover with plastic wrap and cook at high for 4 to 5 min turning dish once.
  21. Continue with topping as above.
  22. Cook 1 minute.
  23. Sprinkle with paprika, if you like.
