Ingredients
- 4 medium eggs
- 3 tbsp milk
- 1/4 red bell pepper
- chopped
- 1/4 small onion
- 1/2 cup left over chopped brisket
- 1/4 cup shredded cheese
- your choice
- 3 tbsp salsa
- optional
Instructions
- beat eggs and milk in small bowl until mixture is well blended
- heat 1 tablespoon oil in nonstick pan
- pour in egg and milk mixture, cook until half set
- add meat, cheese, peppers and onions
- fold over 1/3 , fold again
- cook for one minute, flip, cook for one minute more.
- garnish with salsa if desired
- serve immediately
- goes great with hash browns
