Ingredients
- 1/2 c. Rice - raw
- 1/2 lb Butter
- 1/3 c. Flour
- 1 quart Lowfat milk
- 3 x Large eggs
- 2 lb Spinach
- cooked and minced
- 1/4 c. Green onions
- minced
- 1 1/2 c. Feta cheese
- crumbled
- 1/4 c. Parmesan cheese
- 1 Tbsp. Paprika Salt to taste Pepper to taste White pepper to taste
Instructions
- Cook rice according to directions, set aside.
- Heat the butter.
- Add in flour and stir till thoroughly mixed.
- Cook about two min, then allow to cold slightly.
- Add in mix to simmering lowfat milk a small amount at a time.
- Whip to break up all the lumps then whip in the Large eggs till creamy and smooth.
- Let simmer about 10 to 15 min.
- Place spinach in bottom of 9 x 13 casserole dish.
- Add in rice, feta, cheese and green onions spreading equally over spinach.
- Salt and pepper to taste.
- Pour cream sauce over top.
- Sprinkle with parmesan cheese and paprika.
- Bake at 350 degrees for 20-25 min.
