Breaded Veal with Cheesy Baked Gnocchi

Ingredients

  • 1 recipe Cheesy Baked Gnocchi
  • 1/2 cup flour
  • 4 egg whites
  • 1-1/3 cups dry bread crumbs
  • 1/4 cup Cracker Barrel Finely Shredded 100% Parmesan Cheese
  • 1-1/2 tsp. dried oregano leaves
  • 1-1/2 tsp. garlic powder
  • 1/4 cup oil
  • 8 veal cutlets (2 lb./900 g)
  • 1/4 inch thick

Instructions

  1. Prepare Cheesy Baked Gnocchi as directed.
  2. Meanwhile, place flour in pie plate.
  3. Whisk egg whites in separate pie plate until blended.
  4. Combine next 4 ingredients in third pie plate.
  5. Heat half the oil in large skillet on medium-high heat.
  6. Dip 1 cutlet in flour, then egg whites, then crumb mixture, turning to evenly coat both sides of cutlet with each.
  7. Add to hot oil.
  8. Repeat with 3 of the remaining cutlets.
  9. Cook 2 to 3 min.
  10. on each side or until done.
  11. Remove from skillet; place on platter.
  12. Cover to keep warm.
  13. Repeat with remaining cutlets, heating remaining oil in skillet before adding the coated cutlets.
