Ingredients
- 1 1/2 c. Sugar
- 3/4 c. Brown sugar
- 3 c. Flour
- 1 1/4 tsp Baking soda
- 1 tsp Soda
- 1 tsp Cinnamon
- 1 tsp Salt
- 3 whl Large eggs -- well beaten
- 1 c. Oil
- 1 1/4 tsp Vanilla
- 2 c. Zucchini -- grated
Instructions
- With electric mixer, combine first seven ingredients.
- Then add in Large eggs, oil, vannilla, and zucchini.
- Mix well.
- Divide mix into 2 greased loaf pans and bake at 325 degrees for approx.
- 1 hour or possibly till toothpick inserted at center comes out clean.
- Cold on rack.
- Can be frzn if required.
