Ingredients

  • 4- 1/2 cups White Sugar
  • 1 cup Cornstarch
  • 2- 1/2 teaspoons Pumpkin Pie Spice
  • 2 teaspoons Salt
  • 10 cups Water
  • 3 Tablespoons Lemon Juice
  • 6 pounds Your Favorite Apples

Instructions

  1. You will need 7 quart-sized canning jars with lids and rings.
  2. Prepare your water bath (for the assembled jars of apples) according to standard canning practices.
  3. In a large pan, mix sugar, cornstarch, and pumpkin pie spice.
  4. Add salt and water and mix well.
  5. Bring to a boil and cook until thick and bubbly.
  6. Remove from heat and add lemon juice.
  7. Sterilize canning jars, lids and rings using standard canning practices.
  8. Peel, core, and slice apples.
  9. Pack the sliced apples into the hot canning jars, leaving a 1/2 inch head space.
  10. Fill jars with hot syrup, and remove air bubbles with a knife.
  11. Put lids on and process in a water bath for 20 minutes.
