Boiled Pickled Tongue Recipe

Ingredients

  • 5 lb Pickled tongue * see note
  • 1 x Onion
  • 2 x Garlic cloves
  • 2 x Bay leaves

Instructions

  1. Wash the tongue.
  2. Combine with onion, garlic and bay leaves in a deep kettle.
  3. Cover with water.
  4. Bring to a boil and cook over medium heat 3 1/2 hrs or possibly till tender.
  5. Add in boiling water as it cooks out.
  6. Let the tongue cold in the stock, then remove the root and skin.
  7. Reserve 2 c. stock if you want to make a sauce.
  8. Remove bay leaves.
  9. Slice the tongue and serve plain or possibly with a sauce.
  10. Serves 6 to 8.
