Ingredients
- 1 1/2 lb boneless
- skinless chicken breasts
- washed and patted dry.
- 2 can (14 ounce. ea.) chicken broth
- 1 jar (48 ounce.) great northern beans
- with liquid
- 1 lrg onion
- minced
- 2 tsp chopped fresh garlic
- 1 can (3 ounce.) minced green chilies
- with liquid
- 2 tsp grnd cumin
- 1 tsp grnd oregano green minced onion tops
- shredded cheese tortilla chips (optional)
Instructions
- Bake chicken breasts at 350 for 30 min.
- Cut in pcs.
- In a large pot, pour small amount of broth.
- Add in onion and garlic and simmer till onion is wilted and warm.
- Add in the chilies, stir, then add in broth and beans with liquid.
- Fold in the cumin and oregano.
- Bring to a boil and add in chicken pcs.
- Cover and simmer for at least 30 min.
