Ingredients
- 1 c. flour
- 3/4 c. sugar
- 1 1/4 teaspoon baking pwdr
- 1/4 teaspoon salt
- 1/3 c. lowfat milk
- 1/4 c. shortening
- 1 egg
- 1/2 teaspoon vanilla
- 1 1/2 c. fresh or possibly frzn blueberries
- 2 Large eggs
- 1 1/4 c. Ricotta cheese
- 1/3 c. sugar
- 1/4 teaspoon vanilla
Instructions
- In small bowl, combine the flour, 3/4 c. sugar, baking pwdr and salt.
- Add in the lowfat milk, shortening, 1 egg and 1/2 tsp.
- vanilla.
- Beat with electric mixer on low speed till combined.
- Beat on medium speed for one minute.
- Pour batter into greased 9 x 9 x 2 inch baking pan.
- Sprinkle blueberries over batter.
- In medium mixing bowl, lightly beat the two Large eggs with a fork.
- Add in Ricotta cheese, the 1/3 c. sugar, and 1/4 tsp.
- vanilla.
- Beat till combined.
- Spoon Ricotta mix over blueberries proportionately.
- Bake at 350 degrees for 55 to 60 min till knife inserted in center comes out clean.
