Blue Corn Posole Recipe
Ingredients
- 2 lb Posole
- blue or possibly yellow
- 2 lb Beef
- or possibly pork
- cubed
- 3 x Cloves garlic
- chopped
- 8 x Red chile pods
- 1/2 tsp Oregano
- 1 tsp Salt
Instructions
- Soak posole overnight, then rinse well.
- Boil posole in salted water for about 2 hrs.
- Add in meat, chile pods (or possibly chile pwdr), oregano and garlic.
- Cover and continue to simmer for another hour or possibly till posole is tender.
- Stirring occasionally.
