Ingredients
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 1 (14 1/2 ounce) can chicken broth
- 4 ounces cream cheese
- 8 ounces sharp white cheddar cheese
- grated
- 8 slices bacon
- fried crisp
- patted dry
- and crumbled
- 1 cup sun-dried tomato
- 1 cup fresh spinach leaves
- 1 teaspoon salt
- 12 teaspoon pepper
Instructions
- In large saucepan, place potatoes and chicken broth.
- Bring to a boil.
- Boil for 10 minutes.
- Reduce to simmer.
- Add Cheeses.
- Stir until melted.
- Let cook for 5 minutes.
- Add Bacon and tomato.
- Stir and cook for 5 more minutes.
- Add Spinach, salt and pepper.
- Stir until spinach willts.
- Place in serving dish.
- Cover and let set for 5 minute to thicken.
