Blender gluten free potato cakes

Ingredients

  • 1 large onion
  • 7 medium potatoes diced
  • 2 tbsp parsley
  • 1 clove garlic
  • 1 cup Bobs red hill potao flour", "3 tbsp vegetable oil

Instructions

  1. Put all ingredients except for the potato flour in the blender.
  2. Blend
  3. Pour mix into a bowl mix in flour.
  4. You may add a little more flour if it needs to be thickened some more.
  5. Put skillet on stove with vegetable oil
  6. Using a ice cream dipper scoop the mixture in to the skillet.
  7. Flatten the mixture with a spatula to get a thinner potato cake
  8. Flip the cake cook until golden Brown on both sides
  9. Serve add salt to taste
