Blanco Queso (Mexican white cheese dip)

Ingredients

  • 1 10 oz (280 grm) pkg frozen spinach
  • thawed
  • 1 14 oz (392 grm) can artichoke hearts
  • drained and chopped
  • 1/2 cup (125 ml) parmesan cheese
  • 1 cup (225 ml) shredded mozzarella cheese
  • 1/4 tsp (1 ml) white pepper
  • 1 tsp (5 ml) lemon juice
  • 1/4 cup (60 ml) parmesan cheese

Instructions

  1. Heat oven to 350 degrees (175 C.).
  2. In bowl combine spinach, artichoke hearts, 1/2 cup (125 ml) parmesan, mozzarella, white pepper, and lemon juice.
  3. Mix well and spoon mixture in a 1 quart (950 ml) baking dish.
  4. Top with remaining parmesan cheese.
  5. Bake 15 to 20 minutes.
