Ingredients

  • 2 tablespoons ground black pepper
  • 1 teaspoon garlic powder
  • 1/8 teaspoon dried thyme
  • 1/4 teaspoon lemon pepper
  • 1/4 teaspoon salt
  • 1 pound fresh tuna steak (about 1-inch-thick)
  • cut into 4 equal pieces
  • 3 cups chopped romaine lettuce
  • 3/4 cup Balsamic Vinaigrette (page 313)

Instructions

  1. Mix the black pepper, garlic powder, thyme, lemon pepper, and salt together in a small bowl.
  2. Rub the spice mixture all over the tuna to coat.
  3. Preheat a medium nonstick skillet over high heat.
  4. Add the tuna and sear for about 3 minutes per side.
  5. Mound lettuce on 4 salad plates.
  6. Top each with seared tuna and drizzle with the vinaigrette.
