Black Beans with Lime and Scallions

Ingredients

  • 1 tablespoon olive oil
  • 2 scallions
  • trimmed
  • white and green parts separated and thinly sliced
  • Coarse salt and ground pepper
  • 2 cans (19 ounces each) black beans
  • rinsed and drained
  • 1 teaspoon chili powder
  • 1/4 cup water
  • 1 tablespoon fresh lime juice

Instructions

  1. In a medium saucepan, heat oil over medium.
  2. Add white parts of scallions, and season with salt and pepper.
  3. Cook until softened, stirring frequently, about 3 minutes.
  4. Add beans, chili powder, and the water.
  5. Cook until warmed through, stirring occasionally, about 5 minutes.
  6. Remove from heat, and stir in lime juice; season with more salt and pepper.
  7. Serve immediately, garnished with scallion greens.
