Ingredients

  • 2 cans black beans (15 oz. each)
  • 1 medium onions
  • 1 each green bell peppers
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1 teaspoon red wine vinegar

Instructions

  1. Chop onion and pepper; mince garlic; saute in a little of the bean liquid until soft.
  2. Add beans with remaining liquid.
  3. Add dry spices.
  4. Simmer 15 to 30 minutes.
  5. Add vinegar just before serving.
