Ingredients
- 1 (15 ounce) can black beans
- rinsed and drained
- 1 cup whole kernel corn
- cooked
- 1 sweet red pepper
- cut into 1/2 -inch pieces (3/4cup)
- 1 stalk celery & leaves
- sliced (2/3 cup)
- 1 tablespoon cilantro or 1 tablespoon parsley
- snipped
- lettuce leaf (optional)
- 12 medium avocado
- pitted
- peeled
- and sliced (optional)
- 14 cup salsa
- 14 cup sour cream
- 14 cup mayonnaise
Instructions
- Mix the dressing.
- Stir together with the first 5 ingredients.
- Garnish with sliced avocado.
- Serve on lettuce leaves if desired.
